Steps

  1. In a shallow pan, add pineapple slices and cover with pineapple juice. Bring up to a simmer and let cook for 3 minutes. Remove slices from juice and pat dry. Set on a metal tray and use the TS8000 to char the pineapple slices with the tip of the flame 1 inch away from pineapple achieving dark brown caramelization. Once cooled, dice.
  2. To make the aioli, combine the mayo, mustard, honey, garlic and lemon juice. Mix until smooth. Season with salt and pepper.
  3. Warm both sides of the tortilla by waving the torch over each side. Add slices of swiss cheese and then melt the cheese with the torch. Top with ham, diced pineapple, and a drizzle of aioli. Wrap up and serve.
