Smoked Chicken Wings with Charred Fruit Chutney

 

Directions

  1. Rub the chicken wings with the bbq rub and let sit in the fridge 2-3 hours.
  2. Using your Bernzomatic torch, char the pineapple rings and slices of peach and let cool.  While they are cooling combine the honey and vinegar in a sauce pot and warm until honey completely melts.
  3. Dice the pineapple rings, peach slices, and habanero and add them to the vinegar honey mixture. Add the onion and let simmer until it begins to thicken.  Remove from heat and let cool in the refrigerator.
  4. Heat your smoker to 275.  Add the chicken wings and smoke until internal temperature reaches 160 which is about 2 hours. Once they are at temperature, hit the wings with your torch to add some char.  Remove wings and cover with the chutney to serve.

  • 1 diced Habanero
  • 1/4 cup of minced onion
  • 1/4 cup white vinegar
  • 1/2 cup honey
