Roasted Tomatillo Chicken Tacos


  1. Cut tomatillos in 1/4 pieces, drizzle with oil and bake at 300F for 10 minutes to soften.
  2. Remove from oven and torch with Bernzomatic until charred.
  3. Place tomatillo in blender with, onion, pepper, cilantro, lime juice, ½ cup EVOO, salt to taste. Blend and set aside.
  4. Season chicken with salt and sear in a hot pan. Once a nice golden color is achieved, lower heat and add salsa verde. Cook for 20 minutes on low.
  5. After 20 minutes, pull chicken to add to tacos. Build tacos by torching tortillas, to warm.
  6. Add chicken to taco. Use zester to grate cheese over chicken, pile it high then use Bernzomatic torch to melt.
