Make Vanilla Crème Brûlée

 

Steps

  1. Over low heat
  2. Add 1 ½ cups of milk
  3. 1 cup of heavy cream
  4. Scrape 1 vanilla bean stem
  5. 8 egg yolks
  6. ½ cup of sugar
  7. ¼ tsp of salt
  8. Stir until 145°F
  9. Torch to remove bubbles
  10. Place in oven and add hot water to the pan
  11. Bake for 15-20 minutes at 300°F
  12. Chill 4 hours
  13. Sprinkle raw sugar
  14. Ignite the Bernzomatic TS 400 torch and caramelize the crème brûléefor 20-25 seconds.
