Steps

Method for Onions

  1. In a large sauté pan over medium head, add butter, onions, thyme, salt and pepper
  2. Slowly cook until achieving deep caramelization (approximately 45 minutes)
  3. Once caramelized, remove thyme sprigs

Method for Steak

NY Strip

  1. Pre-heat grill on high heat
  2. Liberally season all sides of meat with salt and pepper
  3. Sear steak (approximately 3 minutes on each side)
  4. Rest steak for an additional 3 minutes off heat to achieve medium temperature

Method for plating

Plating steak

  1. On a ceramic plate, place steak and caramelized onions in plate center (you may serve steak, either slice or keep whole)

    Sear steak
  2. Drizzle Sambucca over onions, ignite with Bernzomatic torch and flame until alcohol is burned off
