French Toast Crème Brulee



Crème Brûlée

  1. 1qt. of milk
  2. 10 egg yolks
  3. ½ cups and 6 tbsp. sugar
  4. ¾ cup of flour
  5. Heat milk mixture until it simmers
  6. Increase heat while whisking until reaching a boil
  7. 6 tbsp. butter
  8. Refrigerate for 2 hours

French toast

  1. 1 cup milk
  2. 6 eggs
  3. A sprinkle of sugar
  4. A dash of brown sugar
  5. Cloves
  6. A little allspice
  7. Some salt
  8. And just  a bit of cinnamon
  9. 1 vanilla beans, scraped
  10. And a pinch of nutmeg
  11. Slice brioche bread and dip into the French toast batter
  12. Cook until golden brown

French toast Crème Brûlée

  1. Slice the French toast in half 
  2. Add the Crème Brûlée filling in between the two slices of French toast.
  3. Finish off the two slices of French toast with more Crème Brûlée filling on top of the two pieces of toast and sprinkle raw sugar.
  4. Ignite the Bernzomatic TS 4000 High Heat Torch and caramelize the French toast for 20-25 seconds
  5. Flambé Fruit, and pour it over the caramelized French toast
