Croque Madame


Tu parles français? No French needed to make this Croque Madame with bubbling béchamel.


Cheese Sauce

  1. In a small saucepan, add butter and flour and whisk over medium heat for 2 minutes.
  2. Add milk while continuously whisking to avoid lumps.
  3. Bring up to a low simmer and cook for 10 minutes.
  4. Whisk in grated gruyere cheese and grated Parmesan cheese, season with salt and pepper, and set aside.

Method for Assembly 

  1. On a heat proof surface, add 1 slice of bread and fully cover with 2 slices of gruyere cheese.
  2. Melt cheese with torch.
  3. Add ham on top of melted gruyere cheese.
  4. Slightly warm with Bernzomatic TS4000 torch.
  5. Add remaining 2 slices of gruyere cheese.
  6. Melt cheese with torch.
  7. Close sandwich with remaining slice of bread.
  8. Spoon 2-3 tablespoons of warm cheese sauce over top of the sandwich.
  9. Gratin with Bernzomatic TS4000 torch.
  10. Top with sunny side up egg and finish with sea salt, pepper, and chives.
