Crispy Skin Snapper

Steps

  1. Poach or pan fry seasoned snapper fillets skin side up until almost cooked. Do not flip.
  2. Remove to a plate and run torch over the skin until crisp and flesh finishes cooking.
  3. Serve with greens and ponzu dressing

Tips

*Note, the skin may shrink up. If this occurs, remove heat from the torch and let it settle before lightly going back over it to crisp
