Charred Beans With Burrata And Lemon

  1. Wash and then blanch in boiling salted water a few handfuls of romano and string beans. Shell your fava beans and blanch.
  2. Pat dry and cut beans into lengths and arrange on a cookie rack. Run your torch over the beans until charred.
  3. Slice a lemon and into thin rounds and repeat the charring process. Char a red Fresno chili and slice into thin rounds.
  4. Arrange the beans on a platter and top with 8oz torn burrata, chili, lemon slices, mint and chervil.
  5. Drizzle with olive oil, lemon juice and season with salt and pepper
