  1. Add all ingredients to a shaker and shake with ice.
  2. Strain back into shaker and discard ice.
  3. Shake a second time, vigorously without ice to agitate the egg whites.
  4. Strain into chilled Coupe glass.
  5. Sprinkle sugar over the top of the foam and torch until the sugars are caramelized.
